Recipe: Roasted Aubergine with Herbed Quinoa

Ingredients:

  • 1 large aubergine (eggplant)
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 400°F (200°C). Slice the aubergine into rounds or lengthwise, depending on your preference.
