Recipe: Creamy Celeriac Soup

Ingredients:

  • 1 medium-sized celeriac, peeled and diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 3 cups vegetable broth
  • 1 cup unsweetened almond milk (or any plant-based milk of choice)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic and sauté until translucent and fragrant.
  2. Add the diced celeriac to the pot and sauté for a few more minutes, stirring occasionally.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and simmer until the celeriac is tender, usually around 20-25 minutes.
