Classic Baked Potatoes with Sour Cream and Chives

Ingredients

  • 4 large baking potatoes
  • Olive oil
  • Salt and pepper
  • Sour cream
  • Fresh chives, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub and dry the potatoes. Rub them with olive oil and sprinkle with salt.
  3. Place the potatoes directly on the oven rack and bake for about 60-75 minutes or until the skins are crispy and the insides are tender.
  4. Cut a slit in the top of each potato and fluff the insides with a fork.
  5. Top with a dollop of sour cream and sprinkle with chopped chives.

Vegetarian Broccoli and Cheddar-Stuffed Baked Potatoes

  • 4 large baking potatoes
  • 2 cups broccoli florets, steamed
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss potato wedges with olive oil, rosemary, thyme, garlic powder, salt, and pepper.
  3. Arrange the wedges on a baking sheet in a single layer.
  4. Roast for 30-35 minutes or until the potatoes are golden and crispy, flipping halfway through.
  5. Serve immediately.
