Caprese Salad with Beef Tomatoes

Ingredients

  • 2 large beefsteak tomatoes, sliced
  • 1 pound fresh mozzarella cheese, sliced
  • Fresh basil leaves
  • Balsamic glaze
  • Salt and pepper to taste
  • Extra-virgin olive oil

Instructions

  1. Arrange tomato and mozzarella slices on a serving platter, alternating them.
  2. Tuck fresh basil leaves between the tomato and mozzarella slices.
  3. Drizzle with extra-virgin olive oil and balsamic glaze. Season with salt and pepper to taste.
  4. Serve immediately as a refreshing appetizer or side dish.

Vegetarian Stuffed Beefsteak Tomatoes with Quinoa

Rich and delicious beef tomatoes stuffed with quinoa and veggies.

Ingredients

  • 4 beefsteak tomatoes
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper (any color)
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Avocado slices for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the beefsteak tomatoes and scoop out the seeds and pulp.
  3. In a bowl, mix cooked quinoa, black beans, corn, red onion, bell pepper, cilantro, and lime juice. Season with salt and pepper.
  4. Stuff each tomato with the quinoa mixture.
  5. Place the stuffed tomatoes in a baking dish and bake for 20-25 minutes or until the tomatoes are tender.
  6. Serve with avocado slices.

Beef Tomato Salsa

Ingredients

  • 3 large beefsteak tomatoes, diced
  • 1 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine diced beefsteak tomatoes, red onion, jalapeño, cilantro, and garlic.
  2. Squeeze lime juice over the mixture and toss gently.
  3. Season with salt and pepper to taste.
  4. Allow the salsa to sit for at least 15 minutes to let the flavors meld. Serve with tortilla chips or as a topping for grilled meats.
