Ingredients
- 4 beefsteak tomatoes
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)

- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- Salt and pepper to taste

Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the beefsteak tomatoes and scoop out the seeds and pulp.
