Garlic Parmesan Bobby Beans

Ingredients

  • 1 pound bobby beans, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Lemon wedges for garnish (optional)

Instructions

  1. Blanch the bobby beans in boiling water for 2-3 minutes, then transfer them to ice water to stop the cooking process. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the blanched bobby beans to the skillet, tossing to coat them in the garlic-infused oil.
  4. Sprinkle with grated Parmesan cheese, salt, and pepper. Continue to sauté until the beans are tender-crisp.
  5. Garnish with lemon wedges if desired and serve.

Lemon Dijon Roasted Bobby Beans

Ingredients

  • 1 pound bobby beans, trimmed
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard

Instructions

  1. Preheat the oven to 400°F (200°C).

  • 1 tablespoon sesame seeds
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons vegetable oil
  • Green onions, chopped for garnish

Instructions

  2. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, sesame seeds, minced garlic, and grated ginger.
  3. Heat vegetable oil in a wok or skillet over medium-high heat.
  4. Add blanched bobby beans and stir-fry for 2-3 minutes.
  5. Pour the sauce over the bobby beans, tossing to coat evenly. Cook for an additional 2-3 minutes.
  6. Garnish with chopped green onions and serve.
