Classic Bramley Apple Pie

Ingredients

  • 6 large Bramley apples, peeled, cored, and sliced
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cornstarch
  • Pastry for a double-crust pie
  • 2 tablespoons butter, cut into small pieces
  • Milk (for brushing the crust)
  • Demerara sugar (for sprinkling)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine sliced Bramley apples, sugar, cinnamon, and cornstarch. Toss until the apples are evenly coated.
  3. Roll out half of the pastry and line a pie dish. Pour in the apple mixture and dot with butter.
  4. Roll out the remaining pastry and place it over the filling. Seal the edges and cut slits on the top for ventilation.
  5. Brush the crust with milk and sprinkle with Demerara sugar.
  6. Bake for 45-50 minutes or until the crust is golden and the filling is bubbly. Allow the pie to cool before slicing.

Bramley Apple Crumble

Ingredients

  • 6 large Bramley apples, peeled, cored, and sliced
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted vegan butter, softened

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix sliced Bramley apples with sugar and cinnamon. Transfer to a baking dish.
  3. In a separate bowl, combine flour, rolled oats, brown sugar, and softened butter. Mix until crumbly.
  4. Sprinkle the crumble topping evenly over the apples and bake for 30-35 minutes or until the topping is golden and the apples are tender. Allow to cool slightly before serving.

Bramley Apple Sauce

A tart and tantalisingly tasty apple sauce.

Ingredients

  • 6 large Bramley apples, peeled, cored, and chopped
  • 1/4 cup water
  • 1/4 cup granulated sugar (adjust to taste)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. In a saucepan, combine chopped Bramley apples, water, sugar, and lemon juice.
  2. Cook over medium heat, stirring occasionally, until the apples are soft and can be easily mashed.
  3. Mash the apples to your desired consistency. Add more sugar if needed.
  4. Optionally, stir in ground cinnamon for extra flavor. Allow the applesauce to cool before serving.
