Classic Mashed Desiree Potatoes

Ingredients

  • 2 lbs Desiree potatoes, peeled and cut into chunks
  • 1/2 cup unsalted butter
  • 1/2 cup whole milk
  • Salt and white pepper to taste
  • Chopped chives for garnish

Instructions

  1. Boil the Desiree potato chunks in a large pot of salted water until tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot.
  3. Add butter and milk to the potatoes.
  4. Mash the potatoes using a potato masher until smooth and creamy.
  5. Season with salt and white pepper to taste. Garnish with chopped chives before serving.

Vegetarian Desiree Potato and Leek Gratin

Ingredients

  • 2 lbs Desiree potatoes, peeled and thinly sliced
  • 2 leeks, thinly sliced
  • 2 cups Gruyere cheese, grated
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • Salt and black pepper to taste
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix thinly sliced Desiree potatoes, leeks, Gruyere cheese, minced garlic, salt, and black pepper.
  3. Layer the potato mixture in a baking dish, finishing with a layer of cheese on top.
  4. Pour the heavy cream evenly over the layers.
  5. Bake in the preheated oven for 40-45 minutes or until the potatoes are tender and the top is golden brown.
  6. Garnish with fresh thyme leaves before serving.

Vegan Desiree Potato and Vegetable Stir-Fry

Ingredients

  • 2 lbs Desiree potatoes, cubed
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 zucchini, sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • Sesame seeds for garnish
  • Green onions for garnish
  • 2 tablespoons sesame oil

Instructions

  1. Steam the Desiree potato cubes until tender, about 10-12 minutes.
  2. In a wok or large pan, heat sesame oil over medium-high heat.
  3. Add minced garlic and grated ginger, stir-frying for 1-2 minutes.
  4. Add steamed potatoes, broccoli, bell pepper, carrot, and zucchini to the wok. Stir-fry for another 5-7 minutes until the vegetables are cooked but still crisp.
  5. In a small bowl, whisk together soy sauce and maple syrup. Pour the sauce over the vegetables and stir to combine.
  6. Garnish with sesame seeds and sliced green onions before serving.
