Classic Dill and Lemon Baked Salmon

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 2 tablespoons fresh dill, chopped
  • Salt and black pepper to taste
  • Garlic powder (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place salmon fillets on a baking sheet. Drizzle olive oil over the salmon and season with salt, black pepper, and optional garlic powder.
  3. Bake in the preheated oven for 15-18 minutes or until the salmon is cooked through.
  4. Garnish with additional fresh dill before serving.

Vegetarian Dill and Feta Stuffed Mushrooms

  • 12 large mushrooms, cleaned and stems removed
  • 1 cup feta cheese, crumbled
  • 1/4 cup breadcrumbs
  • 2 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix feta cheese, breadcrumbs, chopped dill, minced garlic, salt, and black pepper.
  3. Stuff each mushroom cap with the feta mixture.

  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped

  • 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • Salt and pepper to taste
  • Lemon zest for garnish

Instructions

  1. In a large bowl, combine chickpeas, diced cucumber, chopped red onion, and chopped dill.
  2. In a small bowl, whisk together olive oil, white wine vinegar, salt, and black pepper.
  3. Pour the dressing over the chickpea mixture and toss to combine.
  4. Garnish with lemon zest before serving.
