Lemon Garlic Butter Shrimp with Parsley

Delicious shrimp coated in an incredible lemon and garlic butter.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • Zest and juice of 1 lemon
  • Flat-leaf parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. In a skillet, melt butter over medium heat.
  2. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add shrimp to the skillet and cook until they turn pink and opaque.
  4. Stir in lemon zest, lemon juice, and chopped flat-leaf parsley.
  5. Season with salt and black pepper to taste. Serve the shrimp over rice or pasta, garnished with additional chopped parsley.

Quinoa Salad with Chickpeas and Parsley

A super tasty quinoa salad with fresh parsley.

Ingredients

  • 1 cup quinoa, cooked and cooled
  • 1 can (15 oz) chickpeas, drained and rinsed
  • Cherry tomatoes, halved
  • Cucumber, diced
  • Red onion, finely chopped
  • Flat-leaf parsley, chopped
  • Feta cheese, crumbled
  • Olive oil
  • Lemon juice
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, chopped flat-leaf parsley, and crumbled feta cheese.
  2. Drizzle with olive oil and lemon juice.
  3. Toss the salad gently to combine.
  4. Season with salt and black pepper to taste. Chill in the refrigerator before serving.

Chimichurri Sauce for Grilled Vegetables

A delicious and moreish sauce made quick and easy.

Ingredients

  • 1 cup flat-leaf parsley, chopped
  • 4 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine chopped flat-leaf parsley, minced garlic, red wine vinegar, olive oil, dried oregano, and red pepper flakes if using.
  2. Mix well until the ingredients are thoroughly combined.
  3. Season with salt and black pepper to taste.
  4. Allow the chimichurri sauce to sit for at least 15-20 minutes to let the flavors meld. Serve over grilled vegetables or tofu.
