Classic Flat Peach Tart

Ingredients

  • 6-8 flat peaches, sliced
  • 1 sheet puff pastry, thawed

  • 1 tablespoon cornstarch
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon apricot jam (optional, for glazing)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the sliced flat peaches, granulated sugar, lemon juice, vanilla extract, cinnamon, and cornstarch. Mix well.
  3. Roll out the puff pastry sheet on the prepared baking sheet.
  4. Arrange the peach slices in a circular pattern on the puff pastry, leaving a 1-inch border around the edges.
  5. Fold the edges of the puff pastry over the peaches, creating a rustic edge. Brush the edges with the beaten egg.
  6. Bake for 25-30 minutes, or until the pastry is golden brown and the peaches are tender.
  7. If desired, melt the apricot jam and brush it over the peaches for a glossy finish.
