Ginger Soy Glazed Salmon

Juicy and flaky salmon coated in a delicious ginger soy glaze.

Ingredients

  • 4 salmon fillets
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • Green onions, chopped for garnish
  • Sesame seeds for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together soy sauce, honey, grated ginger, minced garlic, and sesame oil.
  3. Place the salmon fillets on a baking sheet and brush with the ginger soy glaze.
  4. Bake in the preheated oven for 12-15 minutes or until the salmon is cooked through.
  5. Garnish with chopped green onions and sesame seeds before serving.

Ginger Garlic Stir-Fried Tofu and Vegetables

Duration: 35 minutes

This will be a stir-fry to remember.

  • Wok or large pan

Ingredients

  • 1 block extra-firm tofu, pressed and cubed
  • 2 cups broccoli florets
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 3 tablespoons soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • Green onions, sliced for garnish
  • Cooked rice or noodles for serving

Instructions

  1. In a wok or large pan, heat sesame oil over medium-high heat.
  2. Add cubed tofu and stir-fry until golden brown on all sides.
  3. Add broccoli, bell pepper, julienned carrot, grated ginger, and minced garlic. Stir-fry for an additional 5-7 minutes until vegetables are tender-crisp.
  4. Pour soy sauce over the tofu and vegetables, tossing to coat evenly.
  5. Serve over cooked rice or noodles and garnish with sliced green onions.

Ginger Coconut Lentil Curry

Duration: 35 minutes

A delicious and moreish lentil curry.

Utensils

Ingredients

  • 1 cup dried red lentils, rinsed
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 2 tablespoons fresh ginger, grated
  • 3 cloves garlic, minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 tablespoon coconut oil
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • Cooked rice for serving

Instructions

  1. In a pot, heat coconut oil over medium heat. Add chopped onion and sauté until softened.
  2. Add grated ginger and minced garlic, cooking for 1-2 minutes until fragrant.
  3. Stir in curry powder, ground turmeric, cumin, and coriander.
  4. Add rinsed red lentils and coconut milk. Bring to a simmer and cook for 15-20 minutes or until lentils are tender.
  5. Season with salt and black pepper to taste. Serve over cooked rice and garnish with fresh cilantro.
