- 4 salmon fillets

Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together soy sauce, honey, grated ginger, minced garlic, and sesame oil.
- Place the salmon fillets on a baking sheet and brush with the ginger soy glaze.
- Bake in the preheated oven for 12-15 minutes or until the salmon is cooked through.
- Garnish with chopped green onions and sesame seeds before serving.
Ginger Garlic Stir-Fried Tofu and Vegetables

- 1 block extra-firm tofu, pressed and cubed
- 2 cups broccoli florets
- 1 bell pepper, thinly sliced
- 1 carrot, julienned

- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- Green onions, sliced for garnish
- Cooked rice or noodles for serving
Instructions
- In a wok or large pan, heat sesame oil over medium-high heat.
- Add cubed tofu and stir-fry until golden brown on all sides.
- Add broccoli, bell pepper, julienned carrot, grated ginger, and minced garlic. Stir-fry for an additional 5-7 minutes until vegetables are tender-crisp.
- Pour soy sauce over the tofu and vegetables, tossing to coat evenly.
- Serve over cooked rice or noodles and garnish with sliced green onions.
Ginger Coconut Lentil Curry

- 1 cup dried red lentils, rinsed
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 2 tablespoons fresh ginger, grated
- 3 cloves garlic, minced
- 2 teaspoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 tablespoon coconut oil
- Salt and black pepper to taste
- Fresh cilantro for garnish
- Cooked rice for serving
Instructions
- In a pot, heat coconut oil over medium heat. Add chopped onion and sauté until softened.
- Add grated ginger and minced garlic, cooking for 1-2 minutes until fragrant.
- Stir in curry powder, ground turmeric, cumin, and coriander.
- Add rinsed red lentils and coconut milk. Bring to a simmer and cook for 15-20 minutes or until lentils are tender.
- Season with salt and black pepper to taste. Serve over cooked rice and garnish with fresh cilantro.
