Ingredients

  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved

  • 2 tablespoons balsamic vinegar

Instructions

  1. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and crumbled feta cheese.
  2. In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, salt, and pepper to make the dressing.
  3. Drizzle the dressing over the salad and toss gently to coat.

Mixed Leaf Salad with Grilled Halloumi

Ingredients

  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 8 oz halloumi cheese, sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  2. Preheat a grill or grill pan over medium-high heat. Grill the halloumi slices for 2-3 minutes on each side until golden brown grill marks form.
  3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
