Classic Nectarine Cobbler

An easy to make and beyond delicious nectarine cobbler.

Ingredients

  • 6-8 ripe nectarines, sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine sliced nectarines, 1/2 cup sugar, lemon juice, and vanilla extract. Mix well and let sit for 10 minutes.
  3. In another bowl, whisk together flour, 1 cup sugar, baking powder, and salt. Add the milk and melted butter, stirring until combined.
  4. Pour the batter into a greased baking dish. Spoon the nectarine mixture evenly over the batter.
  5. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Serve warm with a scoop of vanilla ice cream or whipped cream if desired.
