Classic Peach Pie

A sweet and delicious peach pie.

Ingredients

  • 6-8 ripe peaches, peeled and sliced
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 package (14.1 ounces) refrigerated pie crusts
  • 1 tablespoon butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cornstarch, lemon juice, cinnamon, nutmeg, and salt. Mix well and let sit for 10 minutes.
  3. Roll out one of the pie crusts and fit it into the bottom of a 9-inch pie dish.
  4. Pour the peach filling into the crust, spreading it out evenly. Dot with small pieces of butter.
  5. Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
  6. Brush the top crust with beaten egg and sprinkle with coarse sugar if desired.
  7. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, cover the edges with aluminum foil.
  8. Allow the pie to cool before serving.

Vegetarian Peach and Mozzarella Salad

  • 4 ripe peaches, sliced
  • 2 cups fresh arugula or mixed greens
  • 8 ounces fresh mozzarella, sliced

  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine arugula or mixed greens, sliced peaches, fresh mozzarella, and torn basil leaves.
  2. In a small mixing bowl, whisk together balsamic vinegar, olive oil, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Serve immediately as a refreshing and light meal or side dish.

Vegan Peach and Banana Smoothie

Instructions

  1. In a blender, combine chopped peaches, banana, almond milk, flax seeds, maple syrup (if using), and ice cubes.
  2. Blend until smooth and creamy, adding more almond milk if needed to reach the desired consistency.
