Classic Peach Pie

Ingredients
- 6-8 ripe peaches, peeled and sliced
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 package (14.1 ounces) refrigerated pie crusts
- 1 tablespoon butter, cut into small pieces
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cornstarch, lemon juice, cinnamon, nutmeg, and salt. Mix well and let sit for 10 minutes.
- Roll out one of the pie crusts and fit it into the bottom of a 9-inch pie dish.
- Pour the peach filling into the crust, spreading it out evenly. Dot with small pieces of butter.
- Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
- Brush the top crust with beaten egg and sprinkle with coarse sugar if desired.
- Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, cover the edges with aluminum foil.
- Allow the pie to cool before serving.
Vegetarian Peach and Mozzarella Salad
