Grilled Pineapple Chicken Skewers

Utensils

  • Wooden skewers

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • 1 fresh pineapple, peeled, cored, and cut into chunks
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, whisk together soy sauce, honey, olive oil, minced garlic, and grated ginger to create the marinade.
  2. Thread alternating pieces of chicken and pineapple onto the soaked skewers.
  3. Place the skewers in a shallow dish and pour the marinade over them. Allow to marinate for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and pineapple has a nice char.
  6. Serve the grilled pineapple chicken skewers with rice or your favorite side.

Pineapple Fried Rice

Duration: 25 minutes

A perfect fried rice with the sweet twist of pineapple.

Utensils

  • Wok or large pan

Ingredients

  • 2 cups cooked jasmine rice, chilled
  • 1 cup pineapple chunks
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/2 cup cashews, toasted
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Green onions for garnish

Instructions

  1. In a wok or large pan, heat vegetable oil over medium-high heat.
  2. Add minced garlic and grated ginger, sauté for 30 seconds.
  3. Add mixed vegetables and cook until they start to soften.
  4. Stir in chilled jasmine rice, soy sauce, and sesame oil.
  5. Cook, stirring frequently, until the rice is heated through. Add pineapple chunks and toasted cashews. Toss to combine.
  6. Garnish with sliced green onions before serving.

Pineapple Coconut Smoothie Bowl

  • 1 cup frozen pineapple chunks
  • 1 ripe banana, frozen
  • 1/2 cup coconut milk
  • 1/4 cup shredded coconut
  • Toppings: sliced kiwi, granola, chia seeds, mint leaves

Instructions

  1. In a blender, combine frozen pineapple chunks, frozen banana, and coconut milk.
  2. Blend until smooth and creamy, adding more coconut milk if needed.
  3. Pour the smoothie into a bowl and top with shredded coconut, sliced kiwi, granola, chia seeds, and mint leaves.
