Caramelized Pink Lady Apple Pie

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar

  • 4-5 Pink Lady apples, peeled, cored, and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon

  • 2 tablespoons all-purpose flour
  • 2 tablespoons lemon juice
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/4 cup heavy cream

Instructions

  1. In a food processor, combine flour, sugar, and salt. Add cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  2. Add ice water, one tablespoon at a time, pulsing until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Roll out the chilled dough and line a pie dish.
  5. In a large bowl, toss sliced Pink Lady apples with granulated sugar, brown sugar, cinnamon, nutmeg, flour, and lemon juice.
  6. Arrange the apple mixture in the pie crust.
  7. In a saucepan, melt butter over medium heat. Stir in brown sugar and heavy cream.
  8. Bring to a boil, then reduce heat and simmer for 5 minutes.
  9. Pour the caramel over the apples in the pie crust.
  10. Bake in the preheated oven for 45-50 minutes or until the crust is golden and the apples are tender.
  11. Allow the pie to cool before serving.
