Savoy Cabbage Rolls with Ground Beef

Ingredients

  • 1 head of Savoy cabbage
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of water to a boil. Carefully peel off individual Savoy cabbage leaves and blanch them in boiling water for 2-3 minutes. Drain and set aside.
  3. In a skillet, cook ground beef until browned. Add chopped onions and minced garlic, sautéing until onions are translucent.
  4. Stir in cooked rice, dried oregano, salt, and black pepper into the beef mixture.
  5. Place a spoonful of the beef and rice mixture onto each cabbage leaf and roll them up, tucking in the sides.
  6. Arrange the cabbage rolls in a baking dish. Pour tomato sauce over the top and sprinkle with Parmesan cheese if desired.
  7. Bake in the preheated oven for 25-30 minutes or until the cabbage rolls are cooked through. Garnish with fresh parsley before serving.

Savoy Cabbage and Mushroom Stir-Fry

Ingredients

  • 1/2 head of Savoy cabbage, shredded
  • 2 cups mushrooms, sliced
  • 1 carrot, julienned
  • 1 bell pepper, thinly sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. Heat sesame oil in a wok or large skillet over medium-high heat.
  2. Add minced garlic and grated ginger, sautéing for about 30 seconds.
  3. Add sliced mushrooms, julienned carrot, and thinly sliced bell pepper to the wok. Stir-fry for 5-7 minutes or until vegetables are tender-crisp.
  4. Toss in shredded Savoy cabbage and continue stir-frying for an additional 3-4 minutes.
  5. Pour soy sauce over the vegetables and stir to combine.
  6. Remove from heat and garnish with sliced green onions and sesame seeds.
  7. Serve the Savoy cabbage and mushroom stir-fry over rice or noodles.

Savoy Cabbage and Lentil Soup

A super tasty soup full of delicious veggies and lentils.

Ingredients

  • 1/2 head of Savoy cabbage, shredded
  • 1 cup green or brown lentils, rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 8 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté diced onions and minced garlic until softened.
  2. Add diced carrots and shredded Savoy cabbage to the pot. Cook for 5 minutes.
  3. Stir in rinsed lentils, diced tomatoes, vegetable broth, ground cumin, paprika, salt, and black pepper.
  4. Bring the soup to a boil, then reduce heat and simmer for 25-30 minutes or until lentils are tender.
  5. Adjust seasoning if needed and garnish with fresh parsley before serving.
