French Onion Soup

A moreish and delicious French onion soup.

Utensils

Ingredients

  • 4 large yellow onions, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 cups beef or vegetable broth
  • 1 cup red wine (optional)
  • 1 teaspoon Worcestershire sauce (optional)
  • Salt and black pepper to taste
  • Baguette slices
  • Gruyere or Swiss cheese, grated

Instructions

  1. In a large pot, melt the butter with olive oil over medium heat. Add the thinly sliced onions and cook slowly until caramelized, about 30-40 minutes.
  2. Pour in the beef or vegetable broth and red wine (if using). Add Worcestershire sauce, salt, and black pepper. Simmer for an additional 15-20 minutes.
  3. Preheat the broiler. Ladle the soup into oven-safe bowls. Top each bowl with a slice of baguette and sprinkle grated cheese over the top.
  4. Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes. Serve hot, being careful as the bowls will be very hot.

Caramelized Onion and Mushroom Quiche

Ingredients

  • 1 pre-made pie crust
  • 2 large yellow onions, thinly sliced
  • 2 cups mushrooms, sliced
  • 4 eggs
  • 1 cup milk or heavy cream
  • 1 cup shredded Gruyere or Swiss cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Place the pie crust in a pie dish and set aside.
  2. In a skillet, heat some olive oil over medium heat. Add the thinly sliced onions and cook slowly until caramelized, about 30-40 minutes.
  3. Add the sliced mushrooms to the skillet with the caramelized onions and cook for an additional 5-7 minutes until the mushrooms are softened.
  4. In a bowl, whisk together the eggs, milk or cream, shredded cheese, salt, and black pepper.
  5. Spread the caramelized onions and mushrooms evenly in the pie crust. Pour the egg mixture over the top.
  6. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and golden brown on top.
  7. Let the quiche cool for a few minutes before slicing. Garnish with fresh parsley if desired.
  8. Serve warm or at room temperature.

Vegan French Onion Dip

A flavourful and rich dip.

  • 2 large yellow onions, thinly sliced

  • 1 cup vegan mayonnaise
  • 1/2 cup vegan sour cream
  • 1 tablespoon Worcestershire sauce (ensure it’s vegan)
  • Salt and black pepper to taste
  • Fresh chives for garnish (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the thinly sliced onions and cook slowly until caramelized, about 30-40 minutes.
  2. In a bowl, mix together the vegan mayonnaise, vegan sour cream, and Worcestershire sauce. Season with salt and black pepper to taste.
  3. Once the onions are caramelized, let them cool slightly, then chop them finely and stir them into the vegan mayonnaise mixture.
  4. Garnish with fresh chives if desired.
  5. Serve the vegan French onion dip with chips, crackers, or vegetable sticks.
