The sweetest of the coloured peppers, red peppers have a slight fruity taste and are great to use in meat and fish dishes that use sausages, chicken, ham and tuna.

These respond well to being roasted and charred as it deepens the flavour dramatically. Some cheeses accent the sweetness amazingly, for example parmesan and mozzarella.

They’re full of important vitamins such as vitamin A, E, B6 and K. As well as minerals like potassium.
