Recipe: Roasted Romanesco with Parmesan
- 1 head of Romanesco, cut into florets
- 2 tablespoons olive oil
- 2 cloves of garlic, minced
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Preheat your oven to 400°F (200°C).
- Place the Romanesco florets on a baking sheet. Drizzle with olive oil and sprinkle minced garlic, salt, and pepper over the florets. Toss to coat evenly.
- Roast in the preheated oven for about 20-25 minutes, or until the Romanesco is tender and lightly golden brown.
- Remove from the oven and sprinkle the grated Parmesan cheese over the roasted Romanesco. Return to the oven for an additional 3-5 minutes, or until the cheese is melted and slightly crispy.
- Serve the roasted Romanesco as a side dish or incorporate it into salads, pasta dishes, or grain bowls for added texture and flavor.
