Recipe: Roasted Crown Prince Squash with Sage and Parmesan
- 1 Crown Prince squash, halved and seeds removed
- 2 tablespoons olive oil
- 4-5 fresh sage leaves, chopped
- 2 tablespoons grated Parmesan cheese
- Salt and pepper to taste
- Preheat your oven to 400°F (200°C).
- Cut the Crown Prince squash into wedges or cubes, leaving the skin intact.
- Drizzle olive oil over the squash pieces, ensuring they are evenly coated. Sprinkle with chopped sage leaves, Parmesan cheese, salt, and pepper.
- Place the seasoned squash on a baking sheet and roast in the preheated oven for about 30-40 minutes or until tender and slightly caramelized.
- Remove from the oven and let cool slightly before serving. Garnish with additional sage leaves if desired.
