Recipe: Lemon and Thyme Roasted Chicken


  • 1 whole chicken
  • 2 lemons, sliced
  • A handful of fresh thyme sprigs
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Preheat the oven to 375°F (190°C).
  2. Rinse the chicken and pat it dry with paper towels. Place it in a roasting pan.
  3. In a small bowl, combine the minced garlic, olive oil, salt, and pepper. Rub this mixture all over the chicken, both on the skin and inside the cavity.
  4. Stuff the cavity of the chicken with the lemon slices and fresh thyme sprigs.
  5. Tie the legs together with kitchen twine to hold the shape of the chicken.
  6. Place the chicken in the preheated oven and roast for about 1 to 1 1/2 hours, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
